I think I’ve mentioned before, my go to in a pinch is an omelette. Nothing fancy. I think this was a hand me down gene from my father. My dad could grill on the BBQ and also make breakfast. When I think about it, I think those are the bare essentials in a guy’s culinary playbook. Anything more is gravy. Yeah, I’m not setting the bar too high, maybe because I already know how high I can climb.
While traveling abroad, we stayed at a hotel that included breakfast. I stood at the omelette station and watched the chef roll the omelette instead of flip it. The eggs seemed fluffier and it was enough to alter my one trick pony to a roll instead of a flip. Funny how you pick up things just simply by observing.
I typically go to the farmer’s market a few times per month. I bring a backpack and fill it up. I first do a round to see what’s available for the day. The second round to start filling up my pack. Without a doubt, the longest line is for fresh eggs. There’s usually a variety to choose from. The two that make me most curious are the blue chicken eggs and the duck eggs. Do they taste any differnt? I had to look it up.
The color of an egg’s shell is not indicative of the egg’s flavor; the flavor of eggs is mostly dependent on freshness and the chicken’s diet, while shell color is typically determined by the bird’s breed. Despite looking different, all of these eggs are the same.
Overall, duck eggs and chicken eggs taste similar. However, the flavor of duck eggs may be more intense than that of chicken eggs. Duck eggs tend to be 50–100% larger than chicken eggs. They also have a deep orange yolk that people often say is much richer and creamier than chicken egg yolk.
After reading this, I’m OK with the blue eggs, but think I’ll pass on the duck eggs. I’m not sure how I’ll react to see the orange yolk staring back at me. The richer and creamier taste does sound interesting, though. Maybe one day my curiosity will get the best of me and tip the scales the other way and I’ll find myself preparing a duck egg omelette. I’ll have to marinate on that idea for a while. Vegas odds and my gut are telling me don’t bet on that just yet. We’ll see if I ever become adventurous. If anyone has ever tasted a duck egg, please share your experience. I’m dying to know.
Typically I listen to music as I peruse the farmers market. Depending when I go dictates the music in my ear. Our local one is only open until noon. If I go early, I listen to mellow music. Later, something upbeat and fun. The last time I went, I was there early and listened to Brandi Carlile. Here’s a good one for the playlist: This Time Tomorrow. Enjoy.
Brandi could make such a sad song sound soothing and comforting…it hurts in the most beautiful way ever

When the fire inside that burns so bright begins to grow faded
It can be hard to see the ground on which you stand
Though you may not be afraid of walking in the darkness
You will feel like a stranger in this land
You can try to carve a faith out of your own
But a broken spirit may dry out the bone
And the edges of the night may cause you sorrow
You know I may not be around this time tomorrow
But I'll always be with you
Yeah, I'll always be with you
When the hope that you hold tightly to has all but vanished
And there are no words of comfort to be found
You will know what it means to be lost and without love
May you fight to kill that deafening sound
But our holy dreams of yesterday aren't gone
They still haunt us like the ghosts of Babylon
And the breaking of the day might bring you sorrow
You know I may not be around this time tomorrow
But I'll always be with you
I'll always be with you
Ooh-ooh
Ooh-ooh-ooh-ooh-ooh
Ooh-ooh-ooh
You can try to carve a faith out of your own
But a broken spirit may dry out the bone
And the edges of the night may cause you sorrow
You know I may not be around this time tomorrow
But our holy dreams of yesterday aren't gone
They still haunt us like the ghosts of Babylon
And the breaking of the day might bring you sorrow
You know I may not be around this time tomorrow

I will always be with you

I'll always be with you
The quickest way to ruin an omelette is to get fancy. Not that there anything wrong with something approaching the fritatta/quiche strata of egg dishes. but there’s places I can go for that. The full American omelette experience only happens at truck stop diners. It has to be cooked by a guy in a white t-shirt and served by a waitress wearing too much eye liner and saying things like “y’all need some hot sauce with that?”

You are right about that… keep it simple. Why ruin a good thing?
Great truck stop visual. Spot on.

Omelette is my go-to food as well. I put soy sauce in them. In Asian dramas, they are always the food of choice, too. 🤣

I occasionally do the same, but I’ve been trying to reduce my salt. Now I fill it with veggies…

I’m not really an egg person. I ate a lot of eggs during a protein diet years ago and I think my body finally said, ENOUGH!
My Dad was the master of the grill and he made the best silver dollar pancakes!

I’m pretty decent with an omelette but may have to try the roll, too! A nice song by Brandi, hard to go wrong with anything by her. Great post!

The roll works really well. A lot fluffier, but sometimes a little wet inside.

Beautiful song! What a talent Brandi Carlile. We got duck eggs from a friend once and the bright orange color was a bit weird. We are creatures of habit and egg yolks are supposed to be yellow.🍳

Yeah, my thoughts exactly. Yellow. I can’t imagine eating a hard boiled duck egg…

The duck eggs are no different from hens. Back home, duck eggs are cheaper than hens.
A wonderful, soulful song.

Did you enjoy the taste? Cheaper for a bigger egg?

Ducks eggs are slightly bigger and cheaper. The taste is the same, you won’t feel the difference. We never felt it. Oh and the eggs from the hens do have the orangish yolk as well. Must be the diet.

We had ducks for a while and tried the eggs. That’s a hard pass for me. I did not like them. But there are people that really like them. We were selling them for $10 per dozen when fresh chicken eggs were $2 a dozen!

I like the math on that one. I can begin to enjoy duck eggs if I could sell them at that price!

I wonder if cooking with a lid on before “the roll” might reduce the wet? Will have to give it a try next time…

That’s a fantastic idea…
