I made pico de gallo the other day. I memorized the recipe before shopping for the ingredients. It’s a pretty short list. When I got home from the grocery store, I discovered I made a mistake. I bought a lemon instead of a lime.
I looked up the difference between lemons and limes, wondering if a swap out would work. The most interesting thing I learned was this:
Lemons float, while limes sink.
Even though limes are usually smaller than lemons, the reason they sink comes down to their density compared to lemons. Limes are a little denser than lemons — not by much, but the difference is just enough to cause them to sink in liquid. According to the United States Department of Agriculture, 87.4% of a lemon’s weight is made up of its water content, while a lime’s weight is 88.26% water.
Lemon, lime. Tomayto, tomahto. Potayto, potahto. Close enough for that day. I was in no mood to return to the store. And in the end, it tasted just fine. Next time I’ll be sure to make a grocery list instead of relying on my aging memory.

I’m good without the bass. This song has that classic 80’s sound. So much so, I’m surprised John Hughs didn’t snatch it up for one of his movie soundtracks. There’s no need to add a squeeze of lemon or lime. I think it’s fine the way it is.

I’m pretty sure there’s a marked difference between a lemon and a lime, but I’m glad it worked out for your recipe. ^_^

Good to know re: lemons vs lime! I’ve wondered about making that substitution myself many times (usually in cocktails, lol) I don’t know what that listener was talking about. There’s clearly bass and you can hear it (with many featured close-ups of its strings in the video). You’ve inspired me to go out for Mexican tonight. I hope their pico de gallo is good!
