Persimmon update. I haven’t made the persimmon jelly yet. I did go to the store to buy a big bag of sugar, but that’s as far as I got. This is still on my to do list. Mark my words. I will make it sometime soon.
But for the record, I haven’t been just sitting on my ass.
I tried dehydrating persimmons. I was skeptical at first, but I watched a bunch of YouTube videos and it looked pretty simple with a dehydrator. Not a bad snack. Fresh is still best, but I wanted to give this a try before we make one last push to pick the rest of the tree. We won’t be able to eat them all so drying them out will work well.
I really shocked the hell out of myself and made a persimmon bundt cake. What really made it surprising was it called for an extra step. I had to make persimmon pulp. This entailed slow cooking persimmons in a crock pot for four hours. Normally this would be a deal breaker and I’d immediately walk away. I must have been pretty determined because I actually did it. I’d forgotten to buy powdered sugar so it didn’t get a sweet sprinkle at the end. It still was delicious and I ate it every morning with my coffee for breakfast.
I considered that my trial run. I baked it again for Thanksgiving so the rest of the clan could have a taste. We’ve grown up for decades with this tree in our backyard and it’s surprising nobody ever tried making something with it. This time I dusted it off with powdered sugar as the finishing touch. We all enjoyed this home grown inspired desert. Enough so that this cake may make a seasonal appearance.
I remembered there is a band named Cake. I went through a bunch of songs and could only find one that I’d heard before – Never There. In the back of my head I have this strange feeling I know more music from them, but I’m drawing a complete blank. I don’t have a Cake CD in my collection, so I’m not a gigantic fan. And this song is a little unusual, but I still like it. In honor of my persimmon dessert, this Cake song makes the playlist. Enjoy.

Thanks, Mary! I recently found another recipe to make a pie similar to a pumpkin pie with persimmons. I may give that a try before the season is up. Can you tell I have a sweet tooth? Lol

I love pumpkin pie! So good. Have you ever seen the pumpkin pie at Costco? It’s HUGE. Too big to ever buy on a normal day (can’t believe I’m saying that)
My sister in law made cheesecake and a rhubarb pie for thanksgiving. We’ve been having desert for breakfast, too. It goes perfect with coffee. The best way to begin the day.

NICE! 👏 I’ve never tried persimmons 😶 or maybe I have 😄Good job making a cake!! Persimmon pulp and jam sound like they would go through a similar process. But IDK I’ve never made jam. My guess it’ll take longer, but you can do it! I believe in you! 🙌

I discovered them later in life. I missed out on a few decades of fresh fruit from the tree. I’m trying to make up for lost time!

Hahaha… yes, now accepting orders! I’m always a little shocked when I see how expensive persimmons are at the market. Makes me thankful for the tree in my parent’s backyard!

Someone asked me about the taste and it’s difficult to describe. I prefer it when there is a little crunch, but they become really sweet when they soften. I don’t think I’d ever buy them at the market if we didn’t grow up with the tree. I’m always surprised how expensive they are. We’re really lucky we pick our own for free.

There are so many delicious kinds of fruits for a lot less, I’d recommend those instead. I love our persimmons because it came from our tree that my dad took care for decades. I think of him trimming the tree and watering it when I eat them.

Way to go! I baked a cake once. It was amazing – or I thought so. Lemon cake with homemade lemon curd filling and lemon buttercream icing. I was told it was a little dense. Maybe like me LOL.
